Holiday Coconut Macaroons

14 ounces sweetened shredded coconut
14 ounces sweetened condensed milk
1 teaspoon pure vanilla extract
2 extra-large egg whites, at room temperature
1/4 teaspoon kosher salt


Preheat the oven to 325 degrees F.

Combine the coconut, condensed milk, and vanilla in a large bowl. Whip the egg whites and salt on high speed in the bowl of an electric mixer fitted with the whisk attachment until they make medium-firm peaks. Carefully fold the egg whites into the coconut mixture.

Drop the batter onto sheet pans lined with parchment paper using two teaspoons (or a small ice cream scoop). Bake for 25 to 30 minutes, until golden brown. Cool and serve.

Haupia - Hawaiian Coconut Pudding

Haupia - Traditional Hawaiian Coconut Pudding

9 cups Fresh Grated Coconut
Coconut Water plus Water to make a total of 3 C.
1/2 cup plus 1 tablespoon Cornstarch
1/3 cup Sugar

Bring water to a boil. Mix with grated coconut meat. Let sit at least 15 minutes. Squeeze out coconut milk in cheese cloth or jelly bag until you have 4 1/2 C. liquid. Mix cornstarch with sugar and add coconut milk to make a smooth paste, stirring constantly. Continue cooking until mixture thickens. Pour into greased 8-inch square pan and cool. Cut into 2 inch squares. This pudding is traditionally served at luaus. It is attractive served on ti leaves.

Fresh Coconut Cake


Fresh Coconut Cake

3 cups Cake Flour
3 Eggs
3 teaspoons Baking Powder
1 1/2 teaspoons Vanilla
3/4 teaspoon Salt
1/8 teaspoon Almond Extract
3/4 cup Butter or Virgin Coconut Oil (or half of each)
1 cup Coconut Milk
2 cups Sugar

Preheat oven to 350 degrees. Butter three, 8-inch cake pans. Cut a piece of wax or parchment paper the size of the cake pan bottoms and place in pans. Lightly flour the paper.

Cream butter (and/or coconut oil) with the sugar until light and fluffy. Stir in coconut milk. Add eggs one at a time beating well after each addition.
Sift flour, baking powder, and salt together. Add slowly to sugar mixture.
Divide batter between the three baking pans.
Bake 20-25 minutes or until brown and cake begins to pull away from the sides of the pan. Don't overcook.

Turn cake layers from pans and let cool. Remove the wax paper from cake layers. After cool, brush crumbs that are clinging to layers gently away. Put first layer on a cake plate and proceed to frost each layer with cream frosting.


Coconut Cream Frosting

1/4 cup Butter
2 tablespoon Cream
3 1/2 cup Powdered Sugar
1 teaspoon Vanilla
1/4 teaspoon Salt
3 cup Grated Cocount

Cream butter, powdered sugar, and salt. Add cream, vanilla, and grated coconut.
Spread between layers and on sides and top of fresh coconut cake.

Coconut Flan Recipe

Coconut Flan

8 oz. coconut milk
8 oz. coconut cream
1 cup toasted coconut
1 cup raw sugar
1/4 cup water
2 tablespoon lemon juice
6 whole eggs
3 egg yolks

Preheat oven to 325 degrees F. Combine milk, coconut milk, and coconut cream. Bringto a boil, reduce and simmer 15 minutes. Take off flame and let cool. Add toastedcoconut. Let toasted coconut infuse for 15 minutes. For caramel, add sugar and water in medium sauce pot. Cook until amber color, then whisk in lemon juice.

Pour caramel evenly in 4-oz. ramekins and set aside. Strain milk mixture into a bowl. Add eggs and yolks, whisk lightly. Fill each ramekin with mixture, thenplace ramekin in roasting pan filled half way with hot water. Cook, covered withfoil, for 25 minutes. Serve with Pineapple Salsa or fruit. (Makes 12 small custards.)
